1 large onion, finely chopped
3-4 cloves garlic, finely chopped
2 tablespoons tomato paste
1 cup olive oil
1 fresh tomato, peeled
salt and pepper to taste
water to 6 inches above lentils, add more if needed

Boil lentils on their own for 3 minutes. Discard water.
Brown onion and garlic in saucepan.
Add to lentils along with rest of ingredients and cover with water.
Boil on stove top, medium heat.
Approximately 40 minutes, until lentils are soft.
