Veggies:
Eggplant, potatoes, peppers, zuchinni, onion medium thick slices
Colves of garlic
2-3 ripe tomatos, peeled
2-3 tablespoons tomato paste
1 cup olive oil
oregano, bay leaf, all spice, parsley
salt and pepper to taste
teaspoon sugar

Directions:
Directions:
In a large casserole, add all ingredients and mix to seasoning.
Add in 1 inch of water.
Place in oven, uncovered. Bake at 375*
Approximately 1 hours, mixing halfway through
