1 whole chicken – skinned and fat-free, well cleaned
½ cup celery with leaves – finely chopped
¼ cup parsley – finely chopped
2 cups rice or orzo
salt and pepper to taste
3 eggs – beat with ¼ cup water
2 lemons – juice only

Directions:
Directions:
In stock pot, cover chicken with water and boil lightly for 30 minutes. Skim frequently.
Remove chicken and let cool. Add celery, parsley, orzo and salt/pepper to stock and boil until orzo is still firm but cooked.

In separate bowl, beat eggs and water until fluffy, gradually adding lemon juice. Temper this with warm broth to avoid ‘cracking’ the eggs (making them stringy). Add this to stock pot slowly, stirring constantly. DO NOT BOIL SOUP AGAIN AT THIS POINT.
Cut breast meat into small pieces and replace in pot.
