2 Tbs. butter
1/2 cup brown sugar
4 canned pineapple slices
4 maraschino cherries

1/3 cup shortening soft
1 14 cup all purpose flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp salt
1/2 cup pineapple syrup
1 egg

Directions:
Directions:
Topping-Melt 2 tabs. butter in 8x8x2" pan. Add 1/2 cup brown sugar. Half 4 canned pineapple slices; place in mixture. Halve 4 maraschino cherries; place 1 piece in center of each pineapple slice.

Cake: stir 1/3 cup softened shortening, sift in 1 1/4 cup all -purpose flour, 1/2 cup sugar, 2 TSR. baking powder and 1/2 TSR salt. Add 1/2 cup pineapple syrup, 1 egg. Mix till all flour is dampened. Beat vigorously 2 minutes. Pour batter over pineapples.

Bake in moderate oven 350º 30 to 35 minutes or till done. Let stand 10 minutes; invert on plate.

This was another of the favorites when my boys were growing up. It was quick, easy and inexpensive and they loved it. It is good if you bake it in a iron skillet.
