1 Med. onion cut in large chunks
2 bell peppers cut in large chunks
1 to 1 1/2 lb. beef cut in thin strips (no fat)
1 clove garlic
1 tesp. corn starch
1/2 cup water
vegetable oil
2 Tbs. soy sauce

Directions:
Directions:
In approx. 2 Tbs. hot oil brown onion and garlic until tender. Add beef, cook until no longer pink. Add peppers. Reduce heat to me. combine water, cornstarch. and soy sauce. Stir into beef mixture till sauce is thickened, add more water if needed. Cover and simmer over low heat 2 minutes or until pepper is tender. Serve over cooked rice or with fried rice.
