1 lb lentils
1 to 2 onions diced
1 cup celery chopped
1 small pinch of thyme or rosemary
2 medium carrots diced
Ham bone, pork hock or salt pork
1/2 cup chopped fresh parsley
1 bay leaf
Lemon juice
Milk

Directions:
Directions:
In a large kettle, bring 1 1/2 quarts of water to boil. Add lentils and bring to a boil. Add rest of ingredients, except for milk. Simmer until lentils are tender about 1 to 2 hours. Remove salt pork or ham/pork bone. Run lentils through sieve or crush against side of pot. Thin mixture with milk to desired thickness. Season to taste with salt and pepper.
