1 small onion, minced
1 clove garlic, minced
3 tbsp. butter
3 tbsp. olive oil
1 lb. ground beef
1/2 lb. bulk pork sausage
3 1/2 c. tomatoes
2 1/2 c. whole kernel corn
2 tsp. salt
2 tsp. chili powder
24 pitted ripe olives
Topping:
1 c. corn meal
1 c. milk
2 eggs, well beaten
1 1/2 c. grated American cheese

Directions:
Directions:
Saute onion and garlic in butter and olive oil. Add ground beef and sausage and simmer for 20 minutes. Add tomatoes, corn, salt and chili powder and cook with meat mixture until heated thoroughly. Pour mixture into 11" x 17" baking dish. Press olives into mixture.
Beat together the corn meal, milk and eggs and pour over the meat and olive mixture.
Sprinkle with 1 1/2 c. grated cheese.
Bake in 350º oven for 1 hour or until nicely browned.
