CHICKEN MARINADE:
½ cup soy sauce
½ cup sugar
¼ cup white wine or sake
1 Tablespoon grated fresh ginger

SALAD DRESSING:
1 teaspoon salt
½ teaspoon pepper
3 Tablespoons sugar
2 Tablespoons toasted sesame seeds
4 Tablespoons vinegar
¼ cup oil
1 Tablespoon sesame oil

SALAD INGREDIENTS:
1 small head lettuce (shredded like cabbage)
½ cup thinly sliced water chestnuts
2 green onions, finely minced
½ pound chicken meat, shredded
2 ounces rice threads

Directions:
Directions:
Combine chicken marinade ingredients. Mix well and marinate chicken for 1 to 3 hours.

Combine salad dressing ingredients and refrigerate dressing.

Roast marinated chicken at 350°F for 45 minutes. When cool, shred into slivers. Sprinkle remaining marinade over chicken slivers.

Cook rice noodles according to package directions.

Combine noodles, chicken, and salad dressing. Shake dressing well just before using. Add to salad immediately before serving. Toss well and serve.
