1/4 cup olive oil
2 onions finely chopped
2 green bell peppers
3 cloves of garlic
4 bay leaves
1 T oregano
2 cups long grain rice
2 cans black beans drained and rinsed
2 cans rotel tomatoes
2 cups water
1/4 cup apple cider vinegar
kosher salt and ground pepper to taste

Directions:
Directions:
Heat a large pot over medium heat and add the oil. Stir in the onions, pepper, garlic ,bay leaves and oregano. Stir and cook 8 minutes
Stir in rice, black beans, tomatoes, water vinegar and salt and pepper. Bring to boil, cover and reduce heat to low.
Cook for about 40 minutes or until rice is tender.

This does not take the place of original Cuban black beans but is a good black bean for a large party who wants black bean. Still has great black bean taste - and serves in one pot. left over area great.
