1 1/4c. sifted cake flour
3/4c. sugar
2tsp. baking powder
1/2tsp. salt
1/4tsp. cream of tartar
1/4c. oil
1/3c. orange juice
3 egg yolks
1 1/2tsp. grated orange rind
3 egg whites

Directions:
Directions:
Mix the first four ingredients into a mixing bowl. Make a well and add in the oil, orange juice, egg yolks and orange rind. Beat with a spoon until smooth. Add cream of tartar to egg whites in a separate bowl. Beat egg whites into very stiff peaks. Fold egg whites into first mixture until well blended. Do not stir, gently fold by brining the rubber scraper down, under, across and repeat through the mixture. Turn batter into a 8 or 9 inch tube pan or a 8 inch square pan. Bake in a 325º oven for one hour. Turn pan upside down immediately until cool. Loosen sides of cake to remove from pan. Frost with orange frosting.
