3 C flour
2 C sugar
2 tsp baking powder
1/2 tsp
1 tsp soda
1 tsp nutmeg
2 tsp cinnamon
2 C grated carrots
1 1/2 C oil
3 eggs
1 tsp vanilla
1 small can crushed pineapple
1/4 C chopped nuts (optional)

Frosting
1 pkg (3 oz) cream cheese
1/4 C oleo softened
1/2 tsp vanilla
2 C powdered sugar
Directions:
Directions:
Mix all dry ingredients and sift together. Mix sugar, oil, eggs, pineapple & carrots and add to dry ingredients. Bake in a greased floured pan at 350º for 1 hour or until done.

Frosting
Mix all ingredients together until smooth.
