Ingredients:  
Combine in a large bowl:
1 c. oil
3 eggs slightly beaten
2 c. sugar
2 c. grated raw zucchini
2 tsp. vanilla
Mix in a separate bowl:
1/4 tsp baking powder
1 tsp baking soda
3 c. sifted flour
1 tsp. salt
3 tsp. cinnamon
1 c. chopped nuts
Directions:
Directions:
Combine flour into the other mixture and stir until well mixed.
Put into 2 greased and floured loaf pans. Bake at 325º for 1 1/2 hours or until done.
