Apple Cake Recipe

3 c. raw apples, sliced or diced
1 1/2 c. sugar
2 eggs
3/4 c. oil
Mix above ingredients.
2 1/4 c. flour
1 1/2 teaspoon soda
1/4 tsp. salt
2 tsp. cinnamon
1 1/2 tsp. vanilla
3/4 c. coconut
1/2 c. pecans
Mix all with the apple ingredients. Put in pan. Bake 350 degrees for 45 minutes or until tooth pick comes out clean.

Drizzle Caramel Icing, optional
3 T. butter
3/4 tsp. vanilla
4 T. milk
1/2 c. brown sugar
1 c. powdered sugar
Combine brown sugar, butter, milk, and vanilla. Bring to rolling boil. Remove from heat and stir until cool. Add powdered sugar. Mix well and drizzle on cake.
