8 Yukon Gold Potatoes
2 tbsp. chopped Green Shoot Onion
Pepper
Salt
4 tbsp. Butter
1 very small head of Red Cabbage, shredded
2 Apples, (tart best) cored & sliced thin
1 Sweet or Red Onion, chopped
2 tbsp. Vegetable Oil
1 tbsp. Sugar
½ c. dry Red Wine
½ c. Water
Salt and Pepper
2 tbsp. Dijon Mustard
2 tbsp. Honey
2 1 lb. Pork Tenderloins, well crusted with pepper
2 tbsp. Olive Oil
Pepper and Salt, to taste

Directions:
Potatoes: Put 8 Potatoes in large saucepan and cover with water bring to a boil and cook at medium heat for 12 minutes. Drain. Apple Cabbage: Put Oil, Sugar, and Onion in pan at medium heat until Onions are golden (or limp if red), stir in Apples and Cabbage, cook for 10 min. covered at medium heat, turn every few minutes. Uncover, add the Water and Wine, and cook 10 min. more. Salt and Pepper to taste.
Tenderloin:Preheat oven to 400 degrees. Place Olive Oil and Tenderloins in a heavy oven tolerant baking pan or skillet. Brown the Tenderloins on all sides over medium heat. Mix Honey and Mustard together and coat Tenderloins with the mixture. Bake in the oven for 10 minutes. Let stand for ten minutes before serving. Serve slices of Tenderloin on a bed of the Apple Cabbage mixture Potatoes on the side for best appearance.
