1 1/2 lb. boneless, skinless chicken breast
½ cup milk
1 egg
½ cup Italian bread crumbs
2 10-oz. chopped, frozen spinach, defrosted and squeezed dry
1 tsp. chopped garlic
3 Tbsp. olive oil
2 Tbsp. olive oil
1 pkg. of Knorr Hollandaise sauce mix, made according to package directions
4 Tbsp. Parmesan cheese

1. Trim fat and flatten chicken breasts as needed.
2. Beat egg and milk in low, flat bowl. Dip chicken breasts in milk mixture, then in Italian bread crumbs.
3. Brown chicken in 3 Tbsp. olive oil.
4. While chicken browns, saute spinach in 2 Tbsp. olive oil and chopped garlic.
5. While chicken browns and spinach sautes, make Hollandaise sauce. (Multi-tasking--weeeeee!)
6. In one large casserole, or in separate ovenproof dishes, layer spinach, chicken breast, and ladle Hollandaise sauce. Sprinkle with Parmesan cheese.
7. Bake in oven until chicken is cooked through and parm/Hollandaise are lightly browned.

***I started making rice or risotto with this, and putting that on the bottom, then the spinach, then the chicken, then the sauce. If you do it this way, all you need to make is a salad and warm up some bread. Yum.
