3/4 lb. boneless, skinless chicken breast
1/2 cup milk
1/2 cup Italian bread crumbs
2 10-oz. chopped, frozen spinach, defrosted and squeezed dry
1 tsp. chopped garlic
3 Tbsp. olive oil
2 Tbsp. olive oil
1 cup Hollandaise sauce, from packaged mix or your own recipe
4 Tbsp. Parmesan cheese
1 Mama Mary’s 12-inch gourmet pizza crust

1. Pre-heat oven to 450 degrees. Place pizza crust in pizza pan.
2. Cut chicken into one-inch cubes. Pour milk and bread crumbs in separate shallow bowls. Dip chicken pieces in milk, then roll in bread crumbs.
3. Heat 3 Tbsp. olive oil in 10-inch skillet. Place chicken in oil once it is hot.
4. As chicken browns, in a separate skillet, heat 2 Tbsp. olive oil and chopped garlic. When garlic is lightly browned, add spinach and sauté for about five minutes.
5. Scatter spinach over pizza crust.
6. When chicken is done, about ten minutes, scatter chicken over spinach.
7. Make Hollandaise sauce according to package directions. Drizzle evenly over chicken and spinach and pie crust. Sprinkle Parmesan cheese on top.
8. Reduce oven temperature to 425 degrees. Keeping pizza in pan, place in oven and bake ten minutes.
9. Remove from oven, allow to cool for five minutes, slice, and enjoy.
