1/2 large Spanish onion
2 egg whites
1/2 C dry unseasoned bread crumbs
3 tsp grated Parmesan cheese
salt

Directions:
Preheat oven 450º Using a sharp knife, cut onion crosswise into 1/2" slices. Separate into rings. In medium bowl, beat egg whites until frothy. Transfer to pie plate. In another pie plate, mix bread crumbs with cheese. Dip onion rings, one at a time, into egg white, then into crumb mixture, coating evenly on all sides. Place on ungreased baking sheet. Bake 15 minutes, or until rings are light and golden brown & crisp. Remove from oven, sprinkle with salt. Serve immediately.
