2 large baking potatoes sliced into 1/2-inch thick rounds
2 1/2 tbsp olive oil
salt and pepper
1/2 pound ground beef
1 can black beans
2 tsp taco seasoning
1 8-ounce package shredded cheese
1 c grape tomatoes, quartered
sour cream and shredded lettuce for serving

Preheat oven to 450º On a rimmed baked sheet, toss the potatoes with 2 T oil, season with salt and pepper. Arrange in a single layer and bake until golden, about 20 minutes. Heat a pan over medium heat, add 1/2 oil and ground beef and cook until browned 2 -3 minutes. Mix in beans, taco seasoning and 2 tbsp water, simmer for 10 minutes. Transfer potatoes to a platter, sprinkle half of cheese on top, spoon on the meat mixture, then top with tomatoes and remaining cheese. Serve with sour cream and lettuce
