¾ c. frozen or fresh Corn
½ Red Onion, chopped
1 clove fresh Garlic, crushed
2 tbsp. Cilantro, chopped
1 Jalapeno Pepper, seeded/chopped
2 tsp. Cumin
¼ cup Lime Juice
Splash of Rice Vinegar & Olive Oil
