1 pkg. (7 oz.) angel hair pasta or thin spaghetti
2 garlic cloves, minced
2 small zucchini, sliced 1/4 in. thick
3 Tbsp. olive oil
1 can (16 oz.) Mexican diced tomatoes, undrained
1/4 c. minced fresh parsley
1 tsp. dried oregano

Directions:
Directions:
Cook pasta according to package directions. Meanwhile, in a skillet, saute zucchini and garlic in oil until zucchini is crisp-tender. Add the tomatoes, parsley, and oregano. Heat through. Drain pasta. Top with zucchini mixture. Enjoy!
