1 cup chopped (unpeeled) potatoes
2 cups minced kale
1 cup chopped onion
4 cups water
1 tbsp oil (canola or olive)
1 tsp salt

Directions:
Directions:
Saute onions in oil.
In 4 cups of boiling water add vegetables and salt. Reduce heat to medium high and cook until kale just wilted..
