2 lg. red potatoes cooked and diced
2 c. cauliflower florets -steamed to crisp/tender
1 c. canned green beans, drained
1 green pepper, cut into rings
2 tomatoes cut in wedges
1/4 c. sliced black olives
6-8 c. torn bib or romaine lettuce
1 small can tuna, drained
2 hard boiled eggs, sliced



Dressing:
6 T. olive oil
3 T. vinegar
1 T. minced onions
2 T. snipped parsley
2 T. chopped dill pickles
1 t. prepared mustard
1/2 t. sugar
1/4 t. pepper
1/2 t. salt

Directions:

Serves: 4-6
Preparation Time: 45 min.

Combine dressing ingredients. Chill 4 hours. Before serving, toss vegetables with lettuce. Top with tuna and hard boiled egg slices. Serve.
