1 thin whole wheat 12" pizza crust (Boboli)
1/4 c. sun dried tomato pesto
1 small zucchini, sliced (1 c.)
1 c. sliced button mushrooms
1/2 c. thinly sliced basil leaf
1/2 med. onion sliced (1/2 c.)
2 t. olive oil
2/ oz. fresh mozzarella, thinly sliced
2 T. grated Parmesan
3/4 c. grape tomatoes
1 medium orange or yellow pepper
1 clove minced garlic

Serves: 2-4

Preheat oven to 425º. Put crust on pizza pan or cookie sheet. Spread with pesto. Toss zucchini, mushrooms, onion and pepper in olive oil. Place in skillet and saute about 6-8 minutes to evaporate excess liquid. Top crust evenly with cheeses. Arrange veggies over cheese. Top with tomatoes. Bake 18-20 minutes. Remove from oven and sprinkle with basil and let stand a few minutes before cutting.
