1 plantain
1/4 cup of refried beans
1/4 cup of sour cream
2 scrambled eggs

Directions:
Directions:
Peel the plantain and cut into fourths, lengthwise. Fry the plantain until golden.

To serve, put the plantain on a plate with the scrambled eggs, beans and sour cream.
