2-3 lbs. Italian sausage
1 T. olive oil
1 1/2c. Parmesan cheese, grated
3 bell peppers, thickly sliced
1 12-oz. pkg. mushrooms, sliced in half
1 yellow onion, sliced
1 T. oregano
1 T basil
1 tsp. black pepper
1 1/2c. mozzarella cheese, grated

Directions:
Fry sausage in oil in a heavy skillet. Cut sausage into one-third pieces. Place cooked sausage in a baking dish that has been sprayed with cooking spray. Sprinkle half of Parmesan cheese over sausage. Wash, dry and slice peppers, mushrooms and onion. Place in skillet with seasonings and fry on medium heat until onions are tender. Spoon vegetables over sausage. Add remaining cheeses over top of mixture. Bake at 350º for about 30 minutes or until cheese is melted. Serve with fresh Italian bread.
