1 c. Total cereal
3/4 c. All Bran cereal
1 1/4 c. all-purpose flour
3/4 c. sugar
1 1/4 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt
1 egg
3/4 c. buttermilk
1/2 c. raisins
1/4 c. canola oil
3/4 c. finely chopped peeled tart apple
3/4 c. grated carrots
1/4 c. chopped walnuts

Directions:
Directions:
Combine the cereals, flour, sugar, soda, cinnamon and salt. In a small bowl, beat the egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple, raisins, carrots and walnuts. Fill paper-lined or oiled muffin cups 3/4 full. Bake at 400º F for 20-23 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from the pan.
