1 lb. miniature carrots
2 bay leaves
1/2 cup white vinegar
1/4 cup water
3 tbsp. sugar
1/2 tsp. salt
1/2 tsp. mustard seeds
1/2 teaspoon dillweed
1/4 tsp. crushed red pepper
1/4 tsp. dill seed
1 clove garlic, minced or pressed

Boil carrots until just tender. Plunge into cold water and drain. Set aside. In heavy plastic bag combine all other ingredients. Mix well. Add cooked carrots, turning several times. Chill at least 48 hours and up to 2 weeks. Serve on lettuce leaves or on toothpicks.
