Catfish fillets (enough for each person to have 2)
1 cup cornmeal
2 tsp seasoning salt
oil for frying

Directions:
Directions:
Cut catfish into 3-4 inch pieces. Add cornmeal and seasoning salt to ziplock or paper bag. Add catfish and shake to coat. Use high sided frying pan with oil about 1/3 way up side. Heat to 350-375 degrees. Fry about 4 mins on each side until golden brown. Drain on papertowels.

As a child I remember catching the catfish in Big Webbs pond, then watching them be cleaned. My Pa would always give me the eggs and I would put them in a jar to "hatch". My mother hated this. haha
