3 Green Onions (Chopped)
1 Cup Canadian Bacon (Diced)
12 Eggs (Beaten)
1 Cup Mushrooms (Sliced)
3-4 slices of Texas Toast
5 Tablespoons Butter
2 Tablespoons Flour
1 1/4 Cup Milk
2 Cups Cheddar Cheese (Shredded)
Salt & Pepper to season

Directions:
Directions:
Saute green onions, mushrooms, and Canadian bacon in 2 tablespoons butter. Add eggs until set. Put egg mixture in casserole dish. Cheese sauce: cook 3 tablespoons butter, flour, and milk until thick: add cheese and salt and pepper to taste. Pour cheese sauce over egg mixture. Texas toast: Butter both sides, slice into cubes, and sprinkle on top of cheese mixture. Optional: Sprinkle paprika on top. Bake at 350 degrees for 30-45 minutes. Enjoy!
