12 oz. farfalle pasta
3 tbsp. olive oil
1 lemon
1/2 cup. red onion, chopped
1 14oz can artichoke hearts, cut in eights
1/2 8.5oz jar sundried tomatoes, julienned
1/2 cup black or kalamata olives
2 tbsp. red wine vinegar
Salt and Pepper

Directions:
Directions:
Cook farfalle pasta according to instructions and drain. Add 2 tbsp. olive oil and juice of half a lemon, salt and pepper to taste and refrigerate overnight.

Add onion, artichoke hearts, tomatoes, olives, garlic, red wine vinegar, juice of half a lemon and 1 tbsp. olive oil. Serve at room temperature.
