2 lbs. sweet potatoes, sliced
3 cloves garlic, peeled and coarsely chopped
1 T chopped fresh rosemary or 1/2 T dried
2 T olive oil
1 tsp salt
1/8 tsp cayenne pepper
1/2 tsp paprika
1/4 c toasted pine nuts
2 T chopped fresh parsley

Directions:
Preheat oven to 375. Place potatoes in a 13 x 9 baking dish. Mix all spices and oil, then coat potatoes with mixture. Bake for 40-45 minutes, turning occasionally. Just before serving, sprinkle with nuts and parsley.
