1 lb. Italian Sausage
2 c. Zucchini (uncooked with peel)
1 c. Green Pepper (chopped)
1 c. Onion (chopped)
2 Cloves Garlic (chopped fine)
1 tsp.Oregano (dried)
4 tbsp. Parsley (chopped/dried)
4 small cans Chicken Broth (56-64 oz.)
2 small cans diced Tomatoes
16 oz. or 1 pkg. fresh Cheese Tortellini

Directions:
Directions:
In large soup pot, saute the Italian Sausage until brown. Add all other ingredients except the tortellini. Bring to a boil and lower the heat to simmer. Cook 20-30 minutes. Add tortellini and cook on low simmer an additional 15 minutes. Be sure not to boil once the tortellini is added as it will cook apart.
