1 avocado
2 T. onions, chopped
1/4 tsp. jalapeņo chilies, chopped
1 1/2 tsp. cilantro, chopped
1/2 tsp. coarse salt
2 T. tomato, chopped, discard juice and seeds

Directions:
Directions:
In a small bowl, using a mortar and pestle, thoroughly mash the onion, chilies, cilantro and salt into a julcy paste. (Use the salt as a grinder.)

Holding the avocado in the cup of the hand, split the avocado in half lengthwise and remove the seed. Slice the avocado lengthwise in approx. 1/8 inch strips, then ten across, forming a grid. Scoop the avocado out of the skin with a spoon.

Add the avocado pieces to the paste and mix together, keeping the avocado chunky. Fold in tomato. If desired, add additional jalapeņo chilies and salt to taste. Serve immediately.
