2 c. sugar
1 tsp. ground cinnamon
1/4 tsp. cream of tartar
1/2 c. boiling water
3 c. pecan halves
1 tsp. vanilla

Directions:
Directions:
Stir together, sugar, cinnamon, cream of tartar and boiling water in a small saucepan. Cook over medium heat, stirring constantly, until the mixture comes to boil, continue boiling until the mixture registers 240º (soft-ball stage) about 8 minutes total.
Remove saucepan from heat. Stir in pecans. Let cool a few minutes. Add vanilla and stir until pecans are evenly coated. Pour pecans onto sheet of waxed paper. Separate the nuts with 2 forks. Let cool. Store in airtight container at room temperature for up to 2 weeks.
