1 English muffin, sliced in half
1 strip of bacon (cut in half)
1 egg
1 slice of American cheese
butter
salt and pepper
cooking spray

Special Equipment: round metal rings a.k.a. mini pancake rings, the same size as the English muffins.

Directions:
Cook bacon and drain on paper towels. Beat egg, salt and pepper together. Butter each slice of English muffin; set aside. Spray the inside of the metal ring with cooking spray and place in same pan bacon was cooked in; pour eggs in. Wait a few seconds then add the two pieces of bacon into the egg. Let cook over medium heat until egg has almost fully hardened. Remove the ring from the egg. It should keep it's form. Flip the egg and top with cheese. Lay down English muffin halves in pan, butter side down, to toast. Let cook for about a minute until cheese in melted. Remove all from pan and make your sandwich.

Try substituting piecing of ham or sliced smoked sausage for the bacon. Just remember to grease the pan before cooking. I often enjoy mine with Tabasco sauce.
