Prepare pie crust. Your recipe or a pre-made crust.

Pie Filling:
1 large lemon
1 1/2 cups sugar
4 large eggs
1/2 cup unsalted butter - softened
1 tsp. vanilla

Directions:
Directions:
Wash lemon and trim off the ends. Cut into 8 wedges. Remove any seeds. Place the lemon, rind included, into a blender. Puree on high for 2 minutes or until the lemon is very finely pulverized. Add sugar and eggs. Blend for 2 minutes. Add butter and vanilla. Blend for 1 minute or until everything is combined and smooth. Pour the filling into prepared crust. Bake at 350º for 35-40 minutes or until the center is set.

Serve pie on the first day it is baked for a mild lemon flavor, or cover pie with plastic wrap, keep at room temperature and serve the next day for a fuller lemon flavor.
