tsp dry mustard
2 cups finely grated extra-sharp cheddar cheese, at
room temperature
tsp salt
2 tbsp finely chopped pickled jalapenos
tsp Worcestershire sauce
1 tbsp finely chopped pimento (opt)
1 cup flour, plus extra for dusting fork

Heat oven to 350 degrees.

In mixing bowl, use wood spoon to cream together butter and cheese until thoroughly blended. Blend in jalapenos, pimento, mustard, salt and Worcestershire sauce. Mix well. Add flour. Stir to make stiff dough.
Roll into 2 (15-inch long) logs. Cut into 1-inch pieces (total of 30 pieces). Roll each piece into smooth ball. Arrange on baking sheets. Using fork dipped in flour, flatten each ball into crisscross pattern. Bake for 16-20 minutes or until lightly browned. Serve hot or at room temperature.

You can prepare logs ahead of time, wrap and freeze. Just slice and bake when needed.
