1 small can evaporated milk
2 eggs
1 small package frozen spinach
4 cups cooked rice
1 1/2 c grated sharp cheddar cheese
2 small cans mushroom soup
1 large onion finely chopped

Directions:
Directions:
Put milk, eggs, sugar, and oil in a blender. Blend until everything is green. Pour this over the rest of the ingredients and stir well. Salt and pepper to taste. Put into a greased casserole dish and bake at 350 for 1 hour. Makes one very large casserole or 2 small ones. This freezes well.
