1/4 lb. bacon
1/2 cup onion, chopped
1/2 cup celery, chopped
1/4 cup bell pepper, chopped
2 cups uncooked rice
2 (16oz.) can tomatoes, pureed
3 tsp. salt
1/4 tsp. black pepper
1 tsp. sugar
1/8 tsp. Tabasco

Directions:
Directions:
In a large frying pan, cook bacon until crisp, crumble and set aside. Saute onions, celery and bell pepper until tender. Add rice, tomatoes, bacon and seasonings. Cook on stove top for 10 minutes. Pour into a large greased casserole and cover tightly. At this point before baking you can add cooked shrimp and/or smoked sausage links cut into bite size pieces. Bake at 350 for 1 hour.
