Family Loved (for YEARS) Chocolate Fudge Recipe

Ingredients: 18oz. semi-sweet chocolate chips 1/2 pound butter (two sticks)-sliced to help with melting 1 t. vanilla extract 4 1/2 c. sugar 1 can evaporated (NOT condensed) milk

Directions: |
Directions:Placed chocolate chips and sliced butter in a large mixing bowl. In a large soup pot: Put sugar and evaporated milk in pot over high heat. Bring mixture to boil while stirring to keep from burning. When mixture reaches a roiling boil ( a boil that cannot be stirred down) begin timer for 6 minutes. Stir constantly for the 6 minutes and pay attention that you do not begin to get small flecks of burnt sugar. You may need to slightly turn the heat down from high...but not much! At the end of the 6 minutes remove the pot from the stove and pour it over the chips and butter in the mixing bowl. Beat on low until the butter is incorporated. Add the vanilla and continue beating on medium until the fudge reaches a smooth consistency-about 1 minute. Pour the fudge into a 9X13 casserole dish that has been lined with a piece of wax paper. I use the wax paper to help lift the fudge out when it has cooled so I can cut it on a large flat surface. |
