2 tbsp oil
1 tsp grated ginger
1 tsp ground cinnamon
4 chicken breasts, cubed
4 green onions, sliced diagonally
1 tbsp light soy sauce
1 chicken soup cube
2/3 cup water
1 tsp sugar
Salt and pepper
2 ripe mangoes, peeled and sliced
2 tbsp sherry

Directions:
Directions:
Heat a wok or pan and add the oil. Add the ginger and cinnamon, and saute for 30 seconds. Add the chicken and green onions, and stir-fry for 5 minutes. Add the light soy sauce, crumbled soup cube, water, and sugar, and bring to a boil. Add salt and pepper to taste, and simmer for 15 minutes. Add the mangoes and sherry, and simmer, uncovered, until the sauce has reduced and thickened.
