1/3 c. olive oil
3 T. lemon juice
2 cloves of garlic, pressed or finely minced
1-1/2 t. oregano
1/2 t. salt
1/4 t. pepper
4 medium tomatoes, cut into wedges
2 small cucumbers, sliced
1 small zucchini, peeled, halved, and cut into thin strips
1/2 small red onion, sliced, and separated into rings
14 oz. artichoke hearts, quartered
14 black olives, halved
4 oz. crumbled feta cheese
lettuce

Directions:
Directions:
Whisk together first 6 ingredients. Add next six ingredients (tomatoes-olives) to dressing and toss well. Chill at least 2 hours.

Sprinkle with feta cheese. Serve on lettuce leaves or toss with mixed greens.
