1 9” pie crust baked (can be done a day ahead)

1 box lemon pudding & pie filling (not instant)
½ cup sugar
¼ cup water
2 egg yolks
Juice of 1 lemon plus water to make 2 cups liquid

Meringue:
3 egg whites
1/3 cup sugar

Directions:
Cook on medium high stirring constantly with whisk bringing to a full boil.
Cool

While filling is cooling prepare meringue

Meringue:
With electric mixer beat 3 egg whites at high speed until frothy, then gradually add 1/3 cup sugar & beat until sugar is dissolved & mixture is stiff, making peaks.

Pour cooled filling into cooled crust
Put meringue on top being sure to seal edges with crust

Bake 350 for 1-15 minutes or until meringue is slightly browned
