Rhubarb Crunch Recipe

1 cup sifted flour
cup uncooked oatmeal
1 cup packed brown sugar
cup melted butter
4 cups diced rhubarb
1 cup sugar
2T corn starch
1 cup water
1 tsp vanilla

Mix until crumbly flour, oatmeal, packed brown sugar,melted butter

Press 1.2 of crumb mix into 9 pan. (If using 9x13 increase everything by @ )
Cover crust with diced rhubarb

Cook until thick & clear: 1 cup sugar, 2T corn starch, 1 cup water, 1 tsp vanilla

Pour cooked, thickened ingredients over rhubarb and top with remaining crumbs. Bake 350 for 1 hour
