1 cup wild rice, washed
6 T butter
1 lb fresh mushrooms, sliced
½ cup chopped onion
2 tsp salt
¼ tsp freshly ground pepper
3 cups cooked turkey, cut into small pieces
½ cups sliced almonds
1 ½ cups chicken broth
1 ½ pint heavy cream
White wine or 1 T fresh lemon

Cover rice with water in a saucepan and bring to a boil. Remove from heat. Let soak 1 hour, then drain. Melt 3 T butter in skillet. Add mushrooms and onion and sauté over medium heat until lightly brown. In a large bowl combine rice, mushroom mixture and all remaining ingredients except butter. Turn into a buttered 2 qt casserole. Cover and bake at 350 for 1 ½ hours. Remove cover, dot with remaining butter and bake uncovered an additional 20 minutes.
