12 large firm tomatoes
2 cups chopped onion
˝ lb butter
3 cans artichoke bottoms (or diced zucchini)
4 cups seasoned croutons
Salt and pepper
Lemon juice

Directions:
Directions:
Cut off tops of tomatoes. Remove pulp and dry tomatoes with paper towel inside and out. Sauté onions in butter. Dice artichoke bottoms. Add to pan. Add croutons; stir for 5 minutes over moderate heat. Season. Fill tomatoes; place in shallow baking dish. Bake at 350 for ˝ hour. Sprinkle with lemon juice just before serving.
