5T butter
c chopped onions
3T flour
tsp salt
Few grains pepper
1 can (4 oz) mushrooms
cup sherry
4 cups (or more) diced
cooked chicken
1 can (5 oz) water chestnuts
drained and sliced
cup diced pimiento
cup shredded swiss cheese
1 cups soft bread crumbs (use
less or skip)

Melt 2T butter in a skillet. Add onion and cook until softened. Stir in flour, salt and pepper. Drain mushrooms, reserving liquid. Combine mushroom liquid with sherry and add enough milk to make 1 cups. Stir into flour mixture. Cook until smooth, stirring constantly. Fold in mushrooms, chicken, water chestnuts, and pimiento. Do not stir. Turn into a greased 2 qt casserole. Sprinkle with cheese and buttered bread crumbs. Bake at 350 for 45-60 minutes.
