1 lb chicken breast, cooked and thinly sliced
1 ˝ T unsalted butter
2 T olive oil
2 large onions, thinly sliced
1, 16 oz jar roasted red peppers, thinly sliced, drained
1 can low-salt chicken broth
1 T balsamic vinegar
12 oz linguine, cooked
˝ cup freshly grated parmesan cheese

Directions:
Directions:
Melt 1 T butter with oil in heavy large skillet over medium high heat. Add onions and sauté until tender and caramelized about 20 mins. Add pepper and sauté about 5 mins. Add chicken broth, vinegar. Reduce heat to medium and simmer until sauce is reduces slightly, about 5 mins. Wisk in remaining ˝ T of butter. Season sauce with salt and pepper to taste. Stir in chicken. Pour sauce mixture over linguine and toss to coat. Sprinkle with parmesan cheese.
