2 cups unbleached flour
1 cup whole-wheat flour
1/4 cup wheat germ
2 pkgs. dry yeast
1 cup quick-cooking oatmeal
1 cup bran cereal
1 cup raisins
1-1/2 cups creamy cottage cheese
2-1/2 cups boiling water
2 T. butter
2 tsp. salt
1/2 cup molasses

In large mixer bowl, mix together these ingredients:
unbleached flour
whole-wheat flour
wheat germ
dry yeast

In another bowl, combine: quick-cooking oatmeal, bran cereal, raisins, creamy cottage cheese, boiling water, butter, salt
Stir until butter has melted, then add 1/2 cup molasses
Stir until well mixed.

Add molasses mixture to dry ingredients in a mixer bowl. Beat 1/2 minute at low speed, then 2 minutes at high speed. Stir in 4-1/2 cups flour. Knead in the mixer or by hand for about 10 minutes, or until ready to rise.

Form dough into a ball and place in a greased bowl. Cover lightly with a damp towel or plastic wrap and allow to rise until double in bulk. Form into 3 loaves and place in greased loaf pans. Let rise again until double in bulk, then bake at 375 F. for 35-40 minutes, or until done.
