1/2 cup vegetable oil
1-1/2 cups sugar
1 cup PLAIN whole-milk yogurt
4 eggs
2 cups flour
a pinch of salt
3/4 tsp. baking powder

Directions:
Directions:
Butter a loaf pan. Do NOT flour it!!!

Cream together 1/2 cup vegetable oil & 1-1/2 cups sugar
Mix in 1 cup PLAIN whole-milk yogurt & 4 eggs
Stir in 2 cups flour, a pinch of salt, 3/4 tsp. baking powder

Mix well with a WHISK so it's well-aerated! Pour into prepared pan and bake at 400 F. for 30 minutes. Check for doneness by putting a clean knife into the center of the cake. If it comes out clean with NO crumbs, it's done. Cool cake on a rack for 30 minutes or so, then remove it from the pan and cool completely.
